Avocado Cilantro Lime Vinaigrette

This is a staple at the Paulson house.  Our favorite use for this creamy, zesty dressing is on taco salad, but it tastes great on any kind of salad, on quinoa, on pasta and on eggs. Make a batch, put it in a jar in the fridge and put it on anything and everything. 

 
 

Ingredients

  • 1 medium or large avocado
  • Juice from one whole lime
  • 3/4 cup water (add slowly)
  • 2 tbsp. olive oil
  • 1 garlic clove
  • One bunch cilantro with the leaves picked off or chopped finely with stems
  • Salt & pepper to taste

Directions

  • Combine avocado, lime juice, olive oil, garlic and cilantro in the blender
  • Add 1/4 cup of water and blend
  • Keep adding water until your dressing gets smooth and you reach the consistency you like. I go for creamy but easily pourable.
  • Add salt & pepper to taste
  • Pour into an airtight jar and store in the fridge for up to one week
